Adzuki brownies

There are loads of modifications how to make "healthy" brownies. This one is not going to be the one and only in our School of healthy cooking. But this time we´ll focus our attention to different ingredients that will finally provide perfetct taste together with the spectrum of very interesting properties.

This way or that way, fans of recipes from this area have a great opportunity to choose the variation that suits them better. If you don´t eat only through eyes but you use your brain while consuming food, don´t waste your time, roll up your sleeves and get down to work.


First thing to do is to soak adzuki beans for a half of a day. Then we pour water off and cook beans in unsalty water for about 40 minutes. When the beans are cooked and tender enough, we can start making the delicious dessert itself.

We transfer cooked adzuki beans into a larger bowl, add bitter organic cacao, birch tree sugar, psyllium and millet flour. Then we crack two eggs from "happy hens" into a bowl, add two spoonfuls of coconut oil, pour a half a decilitre of almond milk and flavor the whole mixture with a little cinamon. All ingredients are then blended until they become smooth chocolate cream. We pour there finely chopped dark chocolate, stir in the phosphate-free baking powder and pour the dough into a baking form that has been greased with a little coconut oil.

We put the form with adzuki dough into a preheated oven and bake our cake at 170 grades of Celsium for about 30 minutes. After a half an hour we can pull out an excellent chocolate brownies that we could hardly find beans flavor in, as it´s covered by delicious flavor of cacao, chocolate, sweet birch tree sugar and soft scent of coconut. Adzuki brownies are served together with fresh strawberries that, thanks to being fresh and juicy, will further intensify the joy from having this delicious chocolate cake.

  1. Each fan of rational eating must be excited about the fact that they can assess nutritionally packed and at the same time balanced brownies. Because it´s a dessert, it´s obvious that we´re going to have a high saccharide food.

  2. The amount of fibre is beautiful, I just cannot find a better word.

  3. One of the key part is always the amount of proteins that we have in abundance. Their quality is relatively at a high level as we are combining here legumes with the animal sources.

  4. The amount of fats is examplary as well. In total, there are in a lower number than proteins, which is vital for the metabolic balance (at least in high saccharide diets). The majority is made up of saturated forms, however, in today´s case it doesn´t hurt with respect to their source.

  5. The total amount of energy is a bit higher but it coresponds naturally with the ratio of nutrients. The thing is that if we have one piece of brownies for siesta, we have to reckon with the fact that we are giving a certain packet of energy to the body. I´d definitely avoid eating sweets within the main course and I´d leave it for a snack.

  6. Digestibility of the cake is at a reasonable level – except for proteins coming partly from legumes and not burdening digestion in any significant way.

  7. Thermally, the dessert shows slightly cooling tendency.

  8. As far as the acid base balance is concerned, after consuming this dessert the inner body environment will be moving in slightly acidifying direction.

  9. We can call today´s brownies as packed with antioxidants. Being combined with quite a part of proteins, we speak about a dish that will be in favor of (and of course will suit to) sportspeople.

  10. Another great advatange is the absence of gluten and lactose .
