Topinambur cream with quinoa

They say that making soup is nothing difficult - we boil particular ingredients in water, give seasoning as preffered and serve. In case of creams, we blend it all and it´s done.

Technically speaking, we are not far from the truth. The trick is that the kitchen offers a wide range of various colors and tweaks that make the final dish colorful especially in taste. These are "details" that are cornerstones of the cookery art.

If we add a correct choice of ingredients to this know-how, we can look forward to a really extraordinary dining experience.

Preparation

First we fry finaly chopped shallot on olive oil, after a while we add clean diced topinambur and diced zucchini. We pour the whole mixture with water and stew it for 5 minutes.

Then we pour a litre of boiling water over vegetable and there we put 2 dices of herb broth, we add a few beads of quinoa and cook it all for about 15 minutes. Just before it´s done, we add nutritional yeast, a pinch of nutmeg and leave the soup boiling for other 2 minutes.

Now we take the pot off the cooker, add 2 cloves of pressed garlic and blend it all until smooth. We can make the creamy soup much smoother by adding almond cream and we can serve this delicacy topinambur cream with quinoa sprinkled with finely chopped chive.

  9. Rich and tasty flavor of the cream will be attractive even for small kids.
