Carrot cake with goji berries

Goji berries are often called the superfood. Considering the content of some nutrients, whole world shows a real interest in it. Beside consuming them, we can use them in loads of recipes. Today we wil make a cake that will be spiced by gluten free characteristics and of course adequate amount of important nutrients.

If all these didn´t mean much, we can´t omit taste which is together with the visual effect the critical factor when consuming food.

Preparation

First we peel and finely grate carrot and put into a bowl, we add almond milk, pour some linseeds, gluten-free flakes and all ingredients are mixed with hand blander into a form of solid „dough“ that contains no lumps and pieces. Then we add millet flour, psyllium, one egg and blend the mixture properly

We pour coconut oil, two tea spoonfuls of honey, half of the tea spoonful of cinnamon, the same amount of ginger and we add about 30g of goji berries. The remained 20g will be chopped into small pieces and will be used to sprinkle the cake on the top. We stir baking powder into the dough and mix it all properly. Then we put our carrot cake into an oven preheated on 180 grades of Celsius. At this temperature it will take about 40 minutes to be finished.

Once the dessert is done, we leave it rest and get it cool down and after a while we sprinkle the top of the cake with red chopped goji berries. And now we can enjoy having a piece of tender and perfectly sweet carrot cake.
